Simple Lemon Poppy Seed Bread

I know I have a section on this blog for food and have one entire post, nice... In an attempt to get this section moving I decided to bake one of my favorites, Lemon Poppy Seed Bread. What better way to spend a quiet Friday with your sister baking and watching Hustlers, keep breaking the internet J.Lo.


Lemon poppy seed bread has always been one of my favorites, lemon is such a bright, zippy flavor, and it makes the kitchen smell so fresh. The best part about this bread is the glaze that goes on top, it soaks into the bread making some bites just a little bit sweeter. Yum. I also simplified this recipe quite a bit for my lazy girl bakers, if you Google others there will be a lot more steps, and who needs that? Not me. Also, if you don’t own a zester I suggest you invest in one. It’s one of those kitchen gadgets that - yes it only has one use - but it is sooo difficult to make citrus-y things without it. Necessities people.


INGREDIENTS FOR LOAF


3 cups flour

1½ cups milk

1½ tsp. vanilla

1½ tsp butter

1 tsp. almond extract (this smells so good)

1–1/8 cups of oil (or applesauce for a healthy alternative)

3 eggs

1½ teaspoons of poppy seeds (usually just throw a bunch in the batter)

1.2 tsp. salt

2 – ¼ cups sugar

1½ tsp. baking powder

Lemon juice (I just squeeze the lemon and don’t really measure)

Lemon zest (again just guesstimate)


INGREDIENTS FOR GLAZE

½ tsp. butter

½ tsp of almond extract

½ tsp. vanilla

¾ cup sugar

¼ cup orange juice (I accidentally put in ½ a cup and it was fine lol)


TO MAKE


Preheat oven to 350 degrees F. Grease 2 loaf pans and set aside, I used butter. This recipe makes two loaves. One for yourself and one for your friend #health


Combine all the ingredients into a large mixing bowl.


Once smooth pour your batter into the bread pans, half of the batter in each.


Throw it in the oven for 1 hour until baked through


Once the bread is done, let it cool for 10 minutes and drizzzzzle the glaze on top. The more glaze the better people!!


Also, this can easily be consumed in a few days so be sure to share with your pals. Or eat the entire thing yourself, who really cares. I ain't judgin!
